When maturing, the cheese will encounter natural ferments that will create its rind, define its texture, and develop the typical regional flavours. The use of grid shelves specifically designed for your cheeses facilitates the processing of different cheese consistencies.
At this stage cheeses are monitored daily, turned if necessary, probed and visually judged by the cheesemaker. This stage requires careful temperature and humidity control to obtain homogeneous products.
