Wood ageing equipment using spruce boards
The equipment allows the maturing of different cheeses in the maturing room or cellar.
The wooden boards allow interactions with the cheese: the humidity of the maturing room is regulated, flora existing in the boards is conducive to the maturing process by the inhibition of pathogenic flora and the development of a surface biofilm of the cheeses. The wooden boards impart their distinctive flavours and ensure quality ageing.
These conditions assure an effective process.
The maturing stage is essential for most cheeses and requires the installation of suitable equipment
With four castoring wheels, the rack moves easily from room to room without having to move your cheeses from the boards! The rack is made entirely of stainless steel which facilitates cleaning. The standard size of the rack accomodates 20 boards.
The boards are made of untreated, unplaned spruce wood. Our spruce boards are of high quality and entirely natural. The boards are maintained by following the methods of the cheesemaker.
Racks can be custom made according to your needs.
