Maturing is carried out at around 4°C. This makes it possible to improve the distribution of ingredients and increase the resistance of the ice cream to thermal shock and to melting.
At this stage, part of the mix can be reserved for future use. The remainder of the mix continues on to the next stage in the process. This ensures continuous production.
