Salting

Salting is carried out in a brining solution. Typical rennet curd cheeses are waterproof and require a long brining time, perhaps spending over a day immersed in the brining solution. The salting process can be completed by rubbing the cheese wheels with either dry salt or a brining solution (rind of the Comté or Beaufort type).
