Pressing

LPressing can be carried out:

  • In individual moulds: for cheese wheels, with bladders or mechanical pressing.
  • Under presses: vertical presses are suitable and very versatile for small and large cheeses.

Great attention must be paid to the acidity during pressing. If neglected, cheeses can show large defects during maturing.

This gives rise to pronounced bitter tastes and crumbly cheese.
