Moulding and Demoulding

The moulding process is very similar that for uncooked hard cheeses.

Traditionally, moulding took place directly in copper cauldrons by passing a cheesecloth under the curd.

here are easier methods of moulding but much depends on the shape of the cheeses : either directly in the moulds or by gravity, pump, or, in an industrial context by vacuum.
